Hubby and I were heading out to a book discussion group Sunday and I thought it would be nice to take something to eat. And what better to eat while discussing The New Earth by Eckhart Tolle than chocolate chip cookies?
These chocolate chip cookies come from the Deceptively Delicious Cookbook by Jessica Seinfeld. I bought this cookbook when it first came out several years ago. These are one of the best chocolate chip cookies I’ve ever eaten. And what’s great is they contain chickpeas for added fiber.

I’ve made these numerous times and they always turn out perfect. You can’t taste the chickpeas and it’s a great way to get fiber in a cookie for even the most picky of the eaters in your family. Her recipe says it makes two dozen, but I make three dozen out of the batch.

Since it makes such a big batch we had quite a few cookies left for us! Of course, they probably won’t last real long even though I’ve hidden them in the freezer.
I have this book. Those cookies are quite good. Funny thing is, I couldn’t figure out if the chickpeas should be pureed or not, since most stuff she specifically said to puree, she did not in this recipe. So, I made it without pureeing and they were equally delicious. The chickpeas almost were like a nut. My mom purees hers when she makes them. I need to make some of these, I have not in a while!

Oh, they do look yummy! Never heard of chickpeas in cookies before but I can imagine it works well.
I’ve seen this book. Does it have a recipe for black bean brownies? One of my students at school brought them in. Maybe my son would eat beans if I put them in cookies.
