HB in Five Mid-March Buns

This week for our HB in Five Bread Challenge we made two great breads – Avocado-Guacamole Bread and Pesto Pine Nut Bread.

Both of these were great breads – easy and fun to make. Unlike the others in the group, I have just been making buns because that’s what we like to eat with soup, salads and dinner.

For the Avocado-Guacamole bread, I substituted salsa for the tomato and used only whole wheat and white whole wheat flour. This made for a heavier bun but still was good. Hubby said they were good, but I really didn’t follow the recipe so I guess I’ll have to make them again. Darn!

For the Pesto Pine Nut Bread I decided to follow the directions – no freelancing on this one. This bread is made with spelt, white whole wheat and and all purpose flours. The pesto gives this recipe a wonderful taste and the pine nuts add a little crunch. I’ve split one in half to show the crumb of this great bun.

Hubby really like this bun and said this was the best I’ve made in this challenge so far. That’s a real compliment coming from the head cook and baker here at Happy Acres.
