This week for our HB in Five Bread Challenge we made two great breads – Avocado-Guacamole Bread and Pesto Pine Nut Bread.
Both of these were great breads – easy and fun to make. Unlike the others in the group, I have just been making buns because that’s what we like to eat with soup, salads and dinner.
For the Avocado-Guacamole bread, I substituted salsa for the tomato and used only whole wheat and white whole wheat flour. This made for a heavier bun but still was good. Hubby said they were good, but I really didn’t follow the recipe so I guess I’ll have to make them again. Darn!
For the Pesto Pine Nut Bread I decided to follow the directions – no freelancing on this one. This bread is made with spelt, white whole wheat and and all purpose flours. The pesto gives this recipe a wonderful taste and the pine nuts add a little crunch. I’ve split one in half to show the crumb of this great bun.

Hubby really like this bun and said this was the best I’ve made in this challenge so far. That’s a real compliment coming from the head cook and baker here at Happy Acres.
One thing great about this challenge is that it stretches me to bake breads I wouldn’t have even thought about trying. If you’d like more information on joining the challenge or checking out the other bakers, click here.
Love your buns!!! Great job……..
Fabulous looking buns! I made buns from other breads too and the Pesta Pine Nut were our favorites as well!
Thanks for baking along with us.
Michelle
Those buns looks so good! The crumb is beautiful with a lovely crust. YUM!
Salsa…what a great subsitute! I’m off to write that in my book. Thanks for sharing. I love the name and look of your blog too 🙂
Buns really are so multi taskable are they not? great to stuff and fill in any way so everyone can get them just the way they like it. Buns are great!
Both of those breads look fantastic. I love seeing that wee bit of red tomato in the Avocado bun.
We also love buns/rolls instead of large slices of bread. It makes for a better serving I think. And with rolls, everyone gets crust!!
I agree, this baking group is stretching me to bake breads I wouldn’t normally bake either. Your rolls look great! We also liked the pesto pine nut the best!
I also made buns from the pesto bread. Loved them. It made great pizza crust too. We liked the avocado bread but I made it with canned tomatoes, which I think gave it more flavor. Fun post.
Tara, I would even increase the salsa next time – maybe most of the water would be salsa juice. Thanks for you comment about my blog name!
Lynn, Cathy, Bonnie, Michelle, Petra, Tara, Marnie, Nancy – thank you all for dropping by. I’m just finding the comments today. Something’s not working on this blog thingy!
Nice job with the buns. I agree about the Braid stretching us to try breads we might not make otherwise.
