One of our challenges this week was to make either bread or muffins from the Whole Wheat Mixed Berry Bread recipe in HB in Five.

Even though we are knee deep in blackberries, I wanted to follow the directions and use frozen berries. I used some of our blackberries from last year’s crop.
Some might object to the color, but I think it’s real pretty. The only problem I found with this recipe is that it wasn’t sweet enough. We did try honey butter on it, but then I couldn’t taste anything but the butter!

The crumb looked great. Here is a up close and personal shot.
I will admit they are good BUT they don’t really taste like blackberries. They taste like a nice bread muffin. If I make them again I’d jazz them up with more blackberries, more sugar or honey and maybe even add some dry fruit. We will eat them for sure, but I’d like a little more flavor next time.

They look good and its a pity about the flavour of the berries not coming through. I used all raspberries which is usually a strong flavour but like you the strongest taste was the honey butter but I did enjoy that.
I agree about the bread lacking in flavor. I couldn’t give this bread away. I also used the mixed berries and although I thought the bread was pretty, it turned out to be a shocking shade of neon purple, which apparantly was not at all appetizing to my taste testers.
Bonnie and Carolyn, I’m glad I’m not the only one who thought it was not a winner. It was good bread, but if I wanted bread I’d make bread not a berry muffin. Anyway, thanks for dropping by and maybe the next one will be better.
I agree, this bread was not my favorite. I did think it was pretty, and was pretty good with peanut butter.
It looks gorgeous. I agree with you on the lack of berry flavor. I’m finding that the whole wheat flavor of a lot of the breads over power the yummy addtions.
Danielle, I use white whole wheat so it’s not as overpowering. I love the taste of WW but in something where I want the berry taste to come through, I use white ww. However, it didn’t work here!
