Attempting Scones

For you who have been reading my blog, you know I make biscotti. But a lot of people don’t like biscotti or the type I make – the less Americanized version or the Italian cantuccini.

I’d love to make cantuccini for the garden club meeting next month (It’s my time to bring snacks.) but I just don’t think they’d like it unless I make the Triple Cinnamon Pecan one that is more like a cookie.

What about scones? I’ve made one batch so far. They were good, but I wanted to try out some other recipes. Hubby said he’d be glad to be a tester.

I purchased this mini scones pan and now I wanted to put it to good use.

My first attempt today was Banana Whole Wheat Scones.

Here is the recipe. The dough was real hard to work with. They taste good and they really look like scones (well, the ones that I pressed down in the pan.) but they are just a bit too dry for me.

Now on to Nordic Ware’s Mini Blueberry Scones, a recipe made just for this little pan.

These turned out pretty, but they are more like cake than scones. I would also add a tad more of sugar to this recipe.

The tester said they were both good, but I believe we need more research. I’m going back to King Arthur to check out a couple more of his recipes before I decide on the final one for the meeting.
