We took some time off yesterday and went to Engelbrecht Orchards to pick apples.
Unfortunately I didn’t bring my camera. It was fun walking through the orchard picking the fresh apples.
You pay for a 10 lb bag and then fill it up. So we filled up two!

We’ll be making applesauce for the freezer and dried apples and leather to snack on this winter and add to oatmeal. But yesterday I made Waldorf Salad.


Apples
yogurt
walnuts
mini-marshmallows
celery
Cutup apples and add the other ingredients. Stir in the yogurt. When I used to buy yogurt I used vanilla for this salad. Now that I use our homemade plain yogurt, I just added a little Stevia to sweeten it up.
Now to process all of these apples for winter. Did I tell you that we filled up our second freezer already?
I think that I see some applesauce in your future! What else are you going to do with all those apples?
We definitely need to go to the orchard soon and get some apples.

That sounds like a perfect breakfast dish, I’ll have to try it! I can’t eat cereal for breakfast anymore, because don’t take a lot of milk very well. But apples and yogurt and nuts sounds so good. Thanks for the recipe Lynda!!

Robin, We’ll be making some applesauce and dried apples and fruit leather. I see some baked apples also. I ate a Golden Delicious today for an afternoon snack. Yum! Won’t be long and they’ll be all gone for another season!
Kristina, I have never eaten it for breakfast but would make a good one. And you can definitely leave out the celery and marshmallows for breakfast or anytime.
