With all of this lavender harvested, I recently made some lavender sugar. It’s really easy and can be made with fresh or dried lavender.

All you need is a cup of sugar and 1/8 cup of fresh lavender. If you are using dried, use 1-2 tablespoons lavender per cup of sugar. I used Royal Velvet since Purple Haze Lavender Farm recommended it for that use. I can see this sugar used in a variety of goodies and on top of those blueberry muffins, a recipe my friend Barbara gave me recently. Yum!

So all you need to do is add lavender to sugar and stir.

And now to wait a couple weeks so the flavors get all jiggy.
When using you can either strain out the lavender or use as is. I’ll let you know how it turns out.

You can also make this by blending up the lavender and sugar together. I might try that later too.
Meanwhile, I harvested another lavender – Hidcote Giant. This Intermediate Lavandin grows 36-40 inches with 20-24 inch stems. This one would make even nicer wands or in dried flower arrangements.


Rounding out the lavender harvest the other day was more Melissa and Royal Velvet. There is just a bit more to harvest making this a banner year here at Happy Acres for lavender.
